GF Dark Chocolate Raspberry oatmeal bars
I absolutely love these bars, and they’ve become a staple here at the Inn. I’ve made these a couple different ways, and they are so simple. If you double the recipe, you can stick it in a 9x13 pan instead of an 8x8, and use them to feed a larger group.
So, here’s the base for an 8x8 square pan:
1/2 Cup Mixed Seed Butter from Costco (OR any other nut butter)
2 Cups Rolled Oats
2 Large Ripe Bananas, mashed
Add all of these together, and mix well.
Now…
Dark Chocolate Raspberry:
Add 1/2 cup dark chocolate chips to the batter. Line the 8x8 with parchment paper, and spoon the batter into the pan. From there, I pull raspberries in half and place the halves all over the top of the batter. While that’s baking, I melt about a 1/2 cup dark chocolate chips and then drizzle that over the baked oatmeal once it’s out of the oven.
White Chocolate Blueberry:
Add 1/2 cup of white chocolate chips and a 1/2 cup of blueberries to the batter. Line the 8x8 with parchment paper, and spoon the batter into the pan. Add a handful of blueberries to the top of the batter once it’s settled in. While it’s baking, melt about a 1/2 cup of white chocolate chips. Drizzle the melted chocolate over the baked oatmeal once it’s out of the oven.
These are so versatile, so delicious, and are also very easy to adapt for different food allergies that might be present as you’re serving others.
